This was my largest and most detailed project ever. I’m not sure I’ll get a chance to do something like this again, but I sure hope so! I made this cake for my brother’s wedding. His fiancee told me that she wanted a castle themed cake. When she sent me a sample image of what she had in mind, I immediately thought, “Oh, I can do better.”
I did some mock-ups on the computer to plan the basic structure and then worked on the details as I went. I was able to make a good deal of the detailing ahead of time with gum paste and fondant so I could focus on the baking and assembly the week of the wedding. I started prep a month ahead of time and worked away on it that whole time. Baking started the week of the wedding and assembly a few days before. I should have measured the width of the baseboard the cake was built on – I was told they had to tip it sideways to get it out my front door!
I went to Michaels to look for things I could use for details. I always seem to end up at Michaels no matter what kind of project I’m working on.
I found a medieval set with knights, some glass tiles I could use to press in textures for the brick and rubber stamp I could use for flagstone patterns.
I decided on making the walls from rice crispy treats so they would be nice and strong and keep their rectangular shape longer. The towers I made from gum paste. I rolled them around soup cans and then pressed in the texture for bricks and dried them on my rolling pins. I could decorate the towers along with detailing way ahead of time. Anything that required firm foundations or structure I made from rice crispy treats.
I used ice cream cones for the pointed towers. Much of the detailing in fondant was done with a clay extruder gun for various shapes – mostly the square and triangle discs.
I marked everything out on a piece of cardboard to make sure I was following my measurements – everything would have to fit around the slab cakes I used as the base of the inside of the castle.
