I made this gingerbread watermill for a contest in St. Catharines (I won). Non-house structures interest me, and I thought this would be a good place to start as most of it is house anyways. The wheel presented some challenges in getting the slats glued in with icing. I wasn’t sure at first if I should leave it dry, seeing that the mill wouldn’t operate during the winter when water would be freezing.
I wanted to try making frozen water with isomalt, so I decided to give it a go. It’s hard to work with just pouring – making sure it doesn’t harden too fast. You have to pour pretty quickly to get it where you want, and it’s hard to form the perfect icicles. You need it pourable but not so hot that the drips won’t stay in place or make icicles.
