I found some stencils that I thought would be perfect for Easter sugar cookies. They turned out ok, but I still haven’t got the perfect consistency for royal icing to use in stencils. I need to work on the balance between too much icing and too little to get the pattern to go through but not be ‘chunky’. I think the best way would be an airbrush. Fondant has such a smooth look for the top of cookies, but I don’t think it is as popular because of the flavour and texture.
I made the basket by piping royal icing on top of a balloon and then popped it once the icing had hardened. I had to do a couple to get one to turn out right. Part of the solution was to spray the balloon with Pam and to make sure to allow for a long enough drying time so the icing wouldn’t collapse when the balloon popped.
