Salted Caramel & Chai Tea Macarons

It took SEVERAL attempts to get macarons just right. Either I was folding too much or too little or had some kind of measurement wrong…Macaron instructions read like some kind of spell from potions in the Harry Potter book, and I was getting something wrong. Fold until the batter flows like lava and you can make a figure 8? Talk about vague!

I think I finally have it though. I got a little obsessed with macrons and looking up new recipes too. There is so much variation in flavours that it’s difficult to choose what to try next. These are different than my usual baking projects – I tend to lean towards baking that looks like other things- macarons are not particularly interesting on that end, but the challenge of getting them just right spurred me on.

I have since seen videos with different shapes for macarons – ice cream cones, cute animals…I might try these sometime, but after making several successful batches, their allure has worn off a bit.
